把锅放到煤气灶(zao)上(shang)后,用大(da)火(huo)把(ba)锅烧热(re),然后倒入油,烧热到七成热时,慢慢的放入鱼,先(xian)从(cong)鱼头部位放入,最后是鱼尾,在这(zhe)个过(guo)程中(zhong),火不要(yao)关小(xiao),防止鱼身(shen)不能定型(xing),那样这道菜(cai)也就失(shi)败(bai)了,当然,在(zai)这(zhe)个过程(cheng)中(zhong),鱼也是要捞(lao)出来,稍微冷(leng)一(yi)点后,用手布包着,挤压(ya)鱼的身体(ti),这样做是(shi)为(wei)了(le)让鱼身松散开来,然后(hou)再下油(you)锅(guo)炸
